Just open up minecraft into the launcher, click edit profile, click where it says use latest version and change it to 1.7.10. Easy.
The reason we haven't updated to 1.8 is because, one its not fully stable. Two eula regulations are still in the air and if we update we'll have to abide by the rules of the eula, and until the server can sustain itself on its own, updating and taking reigns of the new eula will just hurt originalsb
